Foodie Friday: Chilled Cucumber and Apple Soup

Linz and I LOVE soup. That is made pretty clear around these parts when leaves start to change color, and a warm bowl hits the spot on cold days. But what about on these hot Summer days, is one of our favorite dishes suppose to be thrown to the side? It seemed time to see if a cold soup could do the same trick on a hot day.
Linz and I tried a recipe from the blog, Versus from my Kitchen. If you have yet to check out this food blog, you must take a peek. The photography of food is gorgeous. The delightful thing about this recipe for Chilled Cucumber and Apple Soup, is that it does exactly what you hope for. It is light, tangy and refreshing. I slightly modified the recipe, based on what was in my kitchen, substituting limes for lemon and adding dill instead of mint. I also do not mind my soup to have a bit of chunkiness to it, so I skipped straining through a fine sieve. The other wonderful thing about this quick recipe is that you can do the 10 minutes of cooking either the night before or the morning of, when temperatures are cooler. Then your soup will be ready for enjoyment in the evening, when you are ready to be cooled off.

    I have a deep love for soup too. All I need…ever…is a bowl of soup and a good hunk of bread. I can’t wait to see some of your other soup recipes. It’s cold here in Ethiopia right now so all I want to make is soups.
