Challenge: “Adult” Grilled Cheese Sandwiches

Linz gave me the fun job this week of making an “adult” version of a favorite childhood dish of mine.

Carbs and cheese always seems like a good place to start when thinking about meals children like. I went with putting a new spin on the classic grilled cheese sandwich. This one is a little wacky in the flavor department. I decided to mix foods I loved and hated as a kid. One of the cool things about getting older is how your flavor palette develops, right? Which makes it reasonable to assume then that “adult” meals are really about enjoying the flavors you thought were gross as a child.

So what is in this grilled cheese sandwich? The truth is I have become a bit obsessed with mustard lately. It has actually been weirdering me how much I have been looking for an excuse to put mustard on things because I could have sworn I loathed the stuff. But no, turns out I find this sauce to be delicious. As for what I loved growing up, that’s cinnamon raisin bread. Do you see where this is going? Yep, grilled cheese with mustard on cinnamon raisin bread. I know it sounds strange, but that’s another fun part of being an adult. You understand it’s easy to try new things, no harm done.

I think these flavors end up balancing each other. There’s the slightly sweet with sauteed onions, and the cinnamon raisin bread, then there is a bit of tang with the grain mustard, the surprise tartness of green apple slices and of course lots of gooey cheese makes it all work together.

Ingredients:
-Onion
-Fontina Cheese
-Raisin Bread
-Green Apple
-Grain Mustard
-Butter

Directions:

1. Slice as much onion as you want on your sandwich (I like it heaped on there). Sauteed until golden. Take your time with this part allowing the onion to cook down slowly.

2. I like to butter each side of my bread before being grilled, but of course you prep your grilled cheese how you like it. Spread mustard on the inside of on side (or two if you are really feeling it). Pile the middle with thin slices of green apple, cheese and cooked onion.

3. Grill it up. You know what you are doing. Me for instance, you’ll notice I like my bread super crisp.

There is a tamer version of this sandwich. Replace the raisin bread with sour dough, skip the apples and you still have quite the tasty treat with a new spin.

    Mmm… As a omnivore myself I love putting some turkey on my grilled cheese. I will have to try sautéed onions though, because I love them so much!
