Are you tired of appetizers after the big game last Sunday? Me neither. This recipe from E.A.T. for a Spicy Carrot Sandwich seemed like an odd combination, but I’m always looking for interesting ways to spruce up sandwiches, so it seemed worth a go. It was indeed.
Instead of sandwiches I decided to make appetizers out of them and it was perfect. As I noted earlier in the year, appetizers are often cheese plus carbs. While this is still clearly a carb friendly dish, it feels much healthier. A chance to add some veggies to a plate of hors d’oeurves. This also makes a great weekend sandwich. It wouldn’t pack well for work and it’s different enough that it feels like a treat. At the same time, it takes no time to make and you will likely have all the ingredients in the fridge. Making it just right for a Sunday afternoon.

I never would have thought of carrots and caraway seeds together! I will have to try this out! For other interesting flavor combination inspiration I’ve found the Flavor Bible to be pretty useful on those days when I just stare at the fridge and spice drawer but don’t know what to do next.
