Foodie Friday: Salted Caramel Chocolate Cake

Since this season is all about celebrations I decided I just HAD to go to a Chocolate Festival last weekend. I know, I do such difficult things for this blog! I was actually disappointed in my chocolate stamina. I thought I could eat chocolate bit after chocolate bit, but it turns out it all kind of blends in and becomes overwhelming after some time. What did stand out is my new favorite type of chocolate combo, dark chocolate, caramel and salt together. Yum! This of course has lead me to want to try my own version of this trio. 6 Bittersweets seemed like just the right answer. I followed the recipe almost exactly. I almost went with a different chocolate cake recipe for fear of the 1 cup coffee used, but it actually works well and tastes just like a yummy chocolate cake without a strong coffee flavor. I forgot to get corn syrup at the store (story of my baking life!), so I used honey instead for the caramel sauce. It actually worked well. It does not have that amber color, but I hear honey is actually better for you anyway, so maybe worth the exchange.
