Foodie Friday: Gone Camping

Dale and I are packing up the car today to head for a warmer location. Don’t get me wrong, our side of Oregon is nice right now, but I’m excited to take advantage of the sunny weather where we are going camping. It’s going to be a nice way to relax before work becomes hectic in August, as it always does.

In an effort to eat somewhat healthy while camping, we’ve put some extra effort into planning and preparing our food for the trip. (Really, he is putting that extra effort in while I’ve been working. Dale is awesome.) We purchased a bunch of snacking and lunching vegetables and fruits, which he cut up. He also made baked beans, pasta salad, and apple-bran breakfast muffins. It’s a little hard for me to get away from the idea that camping is an awesome excuse to purchase and chow down on packaged foods like chips, candy, granola bars, etc., however, putting in the time now to make healthy choices later will help!

I haven’t tried them yet, but I’m excited about the baked beans recipe. It utilizes both black and cannellini beans, and includes the gem of the baked beans world: bacon. This recipe also adds a touch of smoke, which I’m sure will be delicious.

Smoky Baked Beans

2 Tbsp molasses
2 Tbsp ketchup
1 cup(s) onion(s)
1 clove(s) (medium) garlic clove(s)
1/2 cup(s) roasted red peppers
1 Tbsp canned chipotle peppers in adobo sauce
15 1/2 oz canned black beans
15 1/2 oz canned cannellini beans
1 Tbsp tomato paste
1 tsp canned chipotle peppers in adobo sauce
2 slice(s) uncooked bacon
1/2 tsp liquid smoke
