The sun is out and I’m excited to spend my time basking in its rays. Which means it is also that time of year to put a little less effort into standing over a hot stove. Today’s Foodie Friday is a simple, healthy and tasty dish, that could be a great addition to any potluck, a side dish at dinner or I’ve been enjoying it for lunch. I do believe this is one of our first recipes on Sweet Athena from the Food Network. I kept mostly to the original Roasted Edamame Salad recipe by Alton Brown, just adding in chili pepper flakes to add a nice bite to a cold salad.

Hi! I know I am literally years late, but I found this recipe on Pinterest and am wondering if I use frozen edamame do I have to cook them on the stovetop before roasted them? Or can they go from the freezer to the oven?

Hi Tiff,
It has been a bit of time since I made this recipe, but if I recall, I roasted them frozen. I took them out of the freezer and let them sit for a bit (15 minutes), so they weren’t rocked solid and then roasted them. If you try this and it works, come back and leave a comment, so we have it all straightened out!
