The sun is out and I’m excited to spend my time basking in its rays. Which means it is also that time of year to put a little less effort into standing over a hot stove. Today’s Foodie Friday is a simple, healthy and tasty dish, that could be a great addition to any potluck, a side dish at dinner or I’ve been enjoying it for lunch. I do believe this is one of our first recipes on Sweet Athena from the Food Network
. I kept mostly to the original Roasted Edamame Salad
recipe by Alton Brown, just adding in chili pepper flakes to add a nice bite to a cold salad.
